Ingredients

  • 2 cups quinoa, cooked
  • 1/4 cup red onion, diced (or 35g)
  • 2 green onions, chopped (or 10g)
  • 1/2 cup cucumber, diced
  • 15 cherry tomatoes, halved (or 340g)
  • 5 g mint, destemmed & chopped
  • 10 g parsley, destemmed & chopped
  • 2 tbsp olive oil
  • 2 lemon, juiced
  • 1/2 tsp salt (to taste)
  • 1/4 tsp ground pepper (to taste)

Instructions

  1. combine all ingredients in a medium bowl. Stir.

  2. cover and refrigerate for at least 15 minutes.
