Erin's Apple Crisp

Ingredients

  • 6 apples (I use 3 different kinds)
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 tbsp cinnamon
  • 1 stick unsalted butter
  • 1 bag Betty Crocker Oatmeal Cookie mix

Instructions

  1. preheat oven to 300 degrees. 

  2. lightly grease 13x9 baking dish with cooking spray. 

  3. peel half of the apples.

  4. cut all of the apples into thumb size slices. (I slice and then cut in half).

  5. in a medium bowl mix apples with both sugars and cinnamon. stir for about 90 seconds. you will see the apples start to glisten.

  6. pour into 13x9 baking dish. do NOT rinse the bowl. save to use in step 8.

  7. cut 2 tbsp of butter into little squares and lay randomly on top of the apple mixture.

  8. melt remaining butter. grab same mixing bowl and add dry cookie mix and melted butter. stir. please note the mixture will be dry and a little lumpy.

  9. sprinkle mix on top of apples.

  10. Bake at 300 degrees for an hour. 

  11. serve with light ice cream and enjoy!
