BENEFITS OF SWEET POTATOES
Baked sweet potatoes are not only delicious but there are many health benefits to eating them! They are naturally gluten-free and packed with Vitamin A, B6, D and C (produces collagen which helps maintain skin’s youthful elasticity… do you want to eat them now ladies??). They are also filled with nutrients and antioxidants.
EVERYTHING IN MODERATION
Potatoes in general have gotten a bad rap these past few years with the whole “no carb” era but I am here to tell you, you should follow your grandmother’s lead and eat them! I can still picture my grandma saying “you don’t know what you’re missing!”.
Sweet Potatoes are very versatile and can be used as a side to many dishes! I love to eat them with virtually any type of meat (try with this Pulled Pork recipe) and in various ways (baked, mashed, fries, buns casserole)! They are super easy to make! Below is a step by step process on how to bake them!
- 1 sweet potato
- 1/2 tbsp kerrygold butter
- 1/4 tsp cinnamon
- 1/4 tsp ground pepper
- tin foil
preheat oven to 450.
poke holes randomly in the sweet potato.
wrap with tin foil.
place on a baking sheet.
bake for 45-60 minutes depending on size and softness preference.
remove from oven, remove foil and slice down middle.
with a fork, mash up the inside of the potato
immediately add butter, sprinkle with cinnamon and pepper.
