Pulled Pork Sammies

Crock-pot pulled porkI have been making this pulled pork sammie recipe for years! I would always go to parties and wonder how the heck people made pulled pork. I went home and scoured the internet for a great recipe. I found this one on Miloche.com but apparently that site doesn’t exist anymore. Well good news for you, I’m here to share this delicious & healthy pulled pork recipe!

TO BUN OR NOT TO BUN? THAT IS THE QUESTION

This pulled pork recipe is super easy to make! I use the crock-pot to slow cook the meat and really let the flavors meld together.

This recipe can be adapted to suit your needs. If I make this recipe for a party, then I serve with hawaiian rolls. However, if I make this on a weeknight for my me and my husband or for someone gluten-free, I either serve it with sweet potato buns (shown in photo) or with Baked Sweet Potatoes on the side.

MAKE A RUB

You don’t need a lot of ingredients for this,  mainly spices to make a nice rub on the meat. Don’t skimp on the seasoning. Follow my measurements as you will need all of the spices to cover the pork tenderloin. (Believe me, I tried to skimp the first time and then had to make another batch!). To make the rub just combine all of the spices in a container (make sure it’s big enough to also fit the pork). Stir the spices and then add the pork to that container. Using your hand, pat the pork with the spices. Voila!

NUTRITION

Per 5.5oz serving of meat & onions this recipe has 190 calories, 3.9g fat, 2.5g carbs and 38g protein.  When serving, your healthiest option is to make sweet potato buns as you will only eat about 6 slices (depending on the side). However, most of the time I make it with baked sweet potatoes because it is less work LOL. Just be cognizant of your portion size.

WHERE TO BUY & HELPFUL TOOLS

I buy my pork tenderloin at Costco (see how I store meat here) and spices where ever I can find them the cheapest! A key component to shredding the pork are the claws! These babies shred that meat like no other. However, have no fear, you can use two forks to pull the meat if you don’t have a pair of shredding claws. Prepare for your arm muscles to be bulging post shred.

Ingredients
  • 3-3 1/2 lb pork tenderloin
  • 1 large onion, sliced
  • 3 minced garlic cloves
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp pepper
  • 1 tsp paprika
  • 2 tsp oregano
  • 1/2 tsp cayenne pepper
  • 1 tsp ground cinnamon
  • 2 tsp sea salt
  • juice of 1 lime
  • juice of 1 lemon
  • 1/2 cup bbq sauce
  • bbq sauce ( extra for topping)
SERVE ON
  • sweet potatoes, sliced or baked (see link for how to cook)
  • hawaiian rolls
Instructions
  1. slice onion and lay the slices at the bottom of the crock pot

  2. squeeze half of the lemon and lime juices on top of the onions.

  3. rinse pork and pat dry with a paper towel.

  4. mix together all of the spices in a long tupperware.

  5. lay pork in tupperware and rub spices all over the meat.

  6. lay pork on top of the sliced onions.

  7. squeeze the remaining half of the lemon and lime juices on top of the meat.

  8. set crock pot for 4 1/2 hrs on low heat.

  9. take meat out and shred with claws or two forks.

  10. place shredded meat back in crock pot and add bbq sauce. stir.

  11. set crock pot for another 30 minutes on low so all the flavors meld together.

  12. serve with hawaiian rolls, sweet potato buns or baked sweet potatoes on the side! Top with additional bbq sauce and Enjoy!
