POTATO SUBSTITUTE
Did you know that Cauliflower is the new mashed potato? OK, well technically that’s not true BUT cooking cauliflower when you usually make potatoes is a phenomenal substitute and will keep you slim and trim!
When you put cauliflower in the food processor and then saute it, it looks similar to mashed potatoes and is the perfect side dish to just about anything! I literally just ate it with my brown sugar garlic chicken and it was tasty! I love to top it with Cholula hot sauce and give it a little kick (because you knowa I lika da spicy!!)
EASY, HEALTHY AND DELICIOUS
This recipe is super easy, super healthy and a must try. I got this recipe from my gym Performance 360 and didn’t have to change a thing!
When my father was out here visiting he was a bit skeptical when we told him what we were chefing up. Guess what? He loved it! He said and I quote, “haven’t had a bad meal here yet!!”
WHERE TO BUY
You can buy the pre-cut florets at any local supermarket OR buy the full head and chop it yourself. Trader Joe’s has the best prices for full heads of cauliflower. I usually buy the big bag of florets shown below at Costco!
I can’t promise you that it tastes exactly like potatoes but you seriously won’t even know that its a vegetable! Try it tonight as a side for steak, salmon or whatever you are cooking up!

- 2 lbs cauliflower or large head
- 1 tbsp coconut oil
- 2 tsp minced garlic
- 1/2 tsp sea salt (to taste)
- 1/2 tsp ground pepper (to taste)

add cauliflower to food processor.

process until ground (will still be grainy)

over medium-high heat add coconut oil to pan and heat for about 30 seconds. add garlic and heat for another 30 seconds.

add cauliflower to pan. season with salt and pepper to taste.

saute the cauliflower for about 10 minutes, stirring occasionally. (you want it to get brown in some spots).
