EASY, FRESH AND HEALTHY!
This salad is easy, fresh and healthy! You get your full assortment of vegetables as well as healthy fats (olive oil) in this salad.
Per serving it has about 45 calories, 2g fat, 1g of protein and 5g carbs. It is super easy to make and a perfect side dish or appetizer to any meal.
The recipe for this salad came from my mother! She used to make this for us all the time growing up. Even as a kid I loved this (and believe me I was picky!!). When I got older I asked her to share! If you like avocado, click here use this recipe!
TASTE PREFERENCE
I gave you measurements but add the olive oil, garlic salt and pepper to your taste preference (don’t you hate when recipes tell you that?). Go easy on the olive oil, once you start tossing the juices come out of the veggies and you will find that what you thought was too little, is indeed enough. However, you might need to add more spices. Friendly reminder: you can always add more seasoning but you can’t take it away!
The prep work is easy and your guests will inhale this fresh treat. No leafy greens to choke down on this one. Just fresh, crispy veggies with a little seasoning and you are good to go!
- 2 cups grape/cherry tomatoes halved
- 1 cucumber sliced and halved
- 1 avocado cubed
- 1 tbsp olive oil
- 1/2 tsp garlic salt (to taste)
- 1/2 tsp ground pepper (to taste)

slice tomatoes and cucumbers. cube avocado and add all to a medium bowl.

add olive oil, garlic salt and ground pepper. toss.

taste and see if you want more seasoning. Enjoy!
