This tomato cucumber avocado salad is easy, fresh and healthy! You get your full assortment of vegetables as well as healthy fats in this salad.
The original recipe for this salad came from my mother! One day while making her tomato cucumber salad I noticed I had a half avocado sitting there and decided to throw it in. What a TREAT! Best idea I’ve ever had, if I do say so myself! If you aren’t a fan of avocado just leave it out!
CUSTOMIZE TO TASTE PREFERENCE
Add the olive oil, garlic salt and pepper and taste. You might need to add more. Friendly reminder: you can always add more seasoning but you can’t take it away!

- 2 cups grape/cherry tomatoes halved
- 1 cucumber sliced and halved
- 1 avocado cubed
- 1 tbsp olive oil
- 1/2 tsp garlic salt (to taste)
- 1/2 tsp ground pepper (to taste)

slice tomatoes and cucumbers. cube avocado and add all to a medium bowl.

add olive oil, garlic salt and ground pepper. toss.

taste and see if you want more seasoning. Enjoy!
