Buffalo Chicken Bake

Buffalo-Chicken-BakeLooking to satisfy that Buffalo Chicken craving but don’t want to blow your wad? Try this AMAZING buffalo chicken bake.

It is healthy, yet satisfies that buffalo chicken craving. The base of it is spaghetti squash and I add a ton of sauteed diced chicken to it. There aren’t many ingredients and you can find them easily at your local market.

SPAGHETTI SQUASH!

I adapted this recipe from Peas and Crayons but I simplified it so much its unrecognizable. I don’t like to eat directly out of the spaghetti squash, nor do I like to roast it. So I turned the recipe into a “bake” and also altered the ingredients to make each bite more protein packed.

Pro Tip: I make the spaghetti squash in advance and let it strain before mixing all the ingredients together. I do this to get rid of all the excess water that the vegetable naturally holds. *Do not overcook the spaghetti squash*. Click here for how to cook.

NUTRITION

This recipe is PACKED with protein! Per serving this recipe has 375 calories, 12g fat, 10g carbs and 57g protein!!! Let’s go!! I mean this is like a superstar, all star recipe.

SERVE WITH CELERY!

I serve this drizzled with Walden Farms Blue Cheese dressing and use celery sticks as a scooping mechanism. The celery gives you a serving of veggies and a fresh crunch! It also makes you feel like you’re eating buffalo chicken wings!

If you’re looking for a healthy alternative to buffalo chicken salad (yes the chicken is usually breaded and fried!), buffalo chicken wings, or anything buffalo, you have found your solution!

a delicious and healthy recipe that will cure your Buffalo chicken cravings!

Ingredients
  • 1 medium spaghetti squash (about 4 cups)
  • 2 lbs organic chicken breasts, cubed
  • 1 cup shredded low fat mozzarella cheese
  • 1/3 cup Frank's Red Hot Sauce
  • 1/3 cup greek yogurt
  • 2 tbsp melted butter
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp pepper (or to taste)
TOPPING
  • sliced green onion
  • Walden Farms Blue Cheese Dressing
  • celery sticks (for dipping!)
Instructions
  1. cook the spaghetti squash (click here for how to).

  2. grill or saute your chicken in 1/2 tbsp of evoo and minced garlic (click here for how to saute).

  3. preheat oven to 350 degrees.

  4. melt butter in the microwave or on the stove top.

  5. lightly spray/grease a 13x9 baking dish.

  6. add ALL ingredients to a large mixing bowl and stir. add mixing bowl contents to 13x9 baking dish.

  7. bake for 30 minutes. 

  8. top with green onions, drizzle with blue cheese and serve with celery sticks. Enjoy!

    We made this for dinner tonight and it was delicious. I cooked the spaghetti squash in the instant pot so it took minimal time. Definitely going into the recipe rotation!! Thanks for the inspiration:)

        You just cut it in half, scoop out the seeds and put it in there on the rack. Add a cup of water and set to high for 7 minutes…so fast!!!
