These Avocado Egg Burgers are deeeeelicious! My 15 year old self would be appalled that I ever put an egg on a burger but it is the best thing since sliced bread! The yolk drizzles down into the burger meat and makes it juicy and even more flavorful.
I got this recipe from my gym, Performance 360! They used to have a membership site for recipes but that is gone now, so with permission, I am here to share some of my favorites! Usually I modify them in some way, but with this one… there was no need!
NUTRITION
These delicious burgers have 460 calories, 4g of carbs, 33g of fat and 36g of protein. The fat content is a bit high BUT that is because this is beef and you are getting healthy fat from the avocado as well. The trade off is that the carb content is low and the protein is high. These are also naturally gluten-free.
COSTCO GROUND BEEF
I buy my ground beef from Costco (surprise!) and divide it into 4 patties. The package is 21.44 oz so I usually make 2 – 5oz patties for myself and then my husband gets a little less than 6oz for each of his. If you don’t live near a Costco… 1. I’m sorry! 2. Just look for a lean ground beef. The one I buy is 85/15 (see below for photo).
If I don’t feel like going outside (or for you east coasters in the winter) I use my Calphalon Grill pan. It is amazing and works great for those nights where you don’t feel like venturing outside!
TIMING IS EVERYTHING
These are super easy to make although they take a little timing to make sure you don’t overcook the eggs (the eggs in my picture are a tad overcooked! hey, we can’t all be perfect! lol). I usually wait until there are 3 minutes left on the burgers and then start to cook the eggs. I slice the avocado and get out the cheese shortly after I start cooking the burger, to get that out of the way.
SIDES
I usually serve these with sweet potato fries because they are delicious and good for you! However, you can serve these burgers with your favorite side of choice. Remember, everything in moderation!

- 20 oz lean ground beef
- 4 large eggs
- 2-4 slices cheese
- 1 avocado
- creole, salt, pepper (to season burger meat)

weigh out 4, 5oz patties and roll into patty shape.

lightly season with creole, black pepper and salt.

over med-high heat, lightly spray grill pan with cooking spray. (or use the grill) cover and cook burgers for approximately 12 minutes OR until internal temp reaches your preference. 145 degrees - med rare, 160 degrees - medium. Flip halfway through.

with 3 minutes left on the burger clock. over med-high heat, cook 2 eggs for about 3 minutes. To make the eggs over easy, flip after two minutes.

while meat and eggs are cooking, slice avocado.

top burger with sliced cheese, egg and avocado. Serve with Sweet Potato Fries and Enjoy!
