This Cauliflower Rice recipe is super simple and healthy! It is a great alternative to regular rice because it is low carb and low calorie. It is also naturally gluten-free and vegetarian (duh)!
Cauliflower Rice is simply a low-starch vegetable that has been cut into rice shape and is a great substitute for any type of potato, rice, grain or other side that is full of carbohydrates.
NURTITION
This recipe is super easy to make! I literally just sauteed it with some coconut oil (hello healthy fat!) and seasonings. It has 85 calories per serving, 7g carbs, 4.5g fat and 4g protein. That is dang good when compared to other starchy sides, such as potatoes, rice, grains etc.
WHERE TO BUY
If you buy the cauliflower rice already riced, this recipe only takes 7 minutes to make! I usually buy a 2# bag at Costco and either make it all at once or split the bag and make it two separate nights. They also sell it riced at Trader Joe’s (also check out all the other frozen cauliflower products!) and at the local supermarket.
SERVE WITH…
I love that this cauliflower recipe makes me think I am eating a starchy side so I feel fuller longer. I serve this with salmon, grilled steak, jambalaya, cashew chicken and so much more! A healthier alternative to regular rice or other grains!
- 1 lb cauliflower rice
- 1 tbsp coconut oil
- 1/2 tsp salt (or to taste)
- 1/2 tsp ground black pepper (or to taste)

over low-medium heat, add coconut oil to a saute pan for about 30 seconds.

add cauliflower rice and cover for about 2 minutes stirring occasionally.

add salt and pepper and stir. Cover for about 5 minutes (stirring occasionally) or until cauliflower becomes translucent and it starts to brown.

serve with your main dish of choice! I love with grilled salmon, steak, cashew chicken, jambalaya, etc! I also top with Cholula to give it a little kick!
