rocky road treats 1These Rocky Road treats are a twist on your usual rice krispy treat! Warning: They are addicting! They are also super easy to make and delicious! Chocolate & peanut butter…. what more could you ask for!

GLUTEN-FREE

These rocky road treats are Gluten-free! Just BEWARE of the marshmallows that you use. If you use Jet Puffed (as shown below) you will be good to go. I say beware because some marshmallow companies use a wheat starch so that would make them non gluten friendly.

NO BAKE

Just like rice krispy treats these are no bake! You simply melt almost everything in a large pot and then add the cereal and marshmallows and voila! you have yourself a delicious snack!

After you remove the pot from the heat and stir in the cereal, let the mixture cool for a couple minutes before adding in the marshmallows. This will ensure that the marshmallows stay chunky like the image to the left instead of melted into the batter like the image on the right (which were still delicious).

REFRIGERATE

You want to refrigerate the mixture for at least 15 minutes until they are cool. Preferably 30 minutes or more. They will slice nicely when cool and as long as you spray the baking dish, very easy to get out of the pan!

Ingredients
  • 1/2 cup unsalted butter
  • 1.5 cups semi sweet chocolate chips
  • 1 cup peanut butter chips
  • 3/4 cup crunchy peanut butter
  • 3 cups mini marshmallows
  • 1/4 cup nutella**
  • 4 cups rice krispy cereal**
  • ** instead of Nutella & Rice Krispies you can use 4 cups Cocoa Pebbles/Krispies
Instructions
  1. lightly spray a 13x9 baking dish with cooking spray.

  2. in a large pot over med-low heat, melt butter. add chocolate and peanut butter chips, stirring constantly until melted (about 2 minutes).

  3. add in peanut butter and nutella and stir until melted (about 1 minute).

  4. remove from heat and add in rice krispy cereal. stir until cereal is coated. let cool a couple minutes.

  5. add in marshmallows. stir until combined. (try not to over mix so that the marshmallows completely melt).

  6. press mixture evenly into a baking dish.

  7. refrigerate until firm, about 30 minutes.
