It’s fall, so put your pumpkin pants on and get ready! This pumpkin bread is super easy to make and delicious. It is the perfect mix of pumpkin and spice and is moist and delicious every time. I like mine warm with butter, however my neighbor told me he loves to eat it with whipped cream! Any way you slice it, you will love it!
GLUTEN-FREE OPTION
This recipe is easy to make gluten-free! You simply use Bob’s Red Mill Gluten-Free flour and you have yourself some tasty gluten-free bread. Make sure you look for the Gluten-Free label. For some reason, I thought that all Bob’s Red Mill products were gluten-free and that is not the case! I would’ve had some very sick friends, had I not noticed.
OPTIONS
I add walnut pieces to mine but you can leave them out if you are allergic to nuts or don’t like em! You can also use olive oil instead of vegetable oil. My friend recently made bread with olive oil and it was delicious! I am going to try that next time with this recipe. To me this recipe is the perfect amount of pumpkin however you can always add 1/4 cup more to bump it up a bit.
3 LOAVES OF BREAD
This recipe yields 3 loaves of bread with approximately 8 slices per loaf. It seems like a lot but you should share the wealth with your neighbors and friends. They will love you for it! I brought 2 slices over to my neighbor last night and he texted me saying he had already ate his and was eyeing his wife’s slice. I started laughing!

- 3 1/4 cups flour (gluten-free if necessary)
- 3 cups white sugar
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 15 oz can of pumpkin
- 2/3 cup water
- 4 eggs
- 1 cup vegetable oil
- 1 cup chopped walnuts (or pieces), divided

Preheat oven to 350 degrees. lightly spray 3 bread tins with cooking spray. set aside.

In a large mixing bowl, combine flour, sugar, baking soda, salt, nutmeg and cinnamon. stir.

add pumpkin, water, oil, eggs and 3/4 cup walnuts. stir until well combined.

pour batter into tins and add remaining walnuts to top of each tin.

bake for 50-60 minutes. (done when toothpick inserted comes out clean) let cool a little and slice with a plastic knife. Top with butter and Enjoy!
