preheat oven to 375 degrees (if cooking bacon in oven)
lightly season chicken breasts with creole, salt, pepper.
in a grill pan or on the grill, grill chicken for about 15 minutes or until it reaches internal temp of 165 degrees. When chicken is cool, cut into cubes or bite sized pieces.
while chicken is grilling, make bacon in microwave (place bacon on a plate in between paper towels, microwave about 3 minutes per 2 slices) OR in the oven (line bacon up on a baking sheet and bake for about 15 minutes at 375 degrees)
while chicken is grilling, hardboil the eggs. (I place the eggs in pot in water, turn to high and cook for 12 minutes total)
while chicken, bacon and eggs are cooking start to put the rest of the ingredients into a bowl.
add chicken, crumbled bacon and sliced egg to the salad.
top with balsamic dressing and enjoy!
