Ingredients

  • 1 head romaine lettuce chopped
  • 2 bell peppers, sliced
  • 1 cup white/brown rice
  • 1 lb lean ground turkey
  • 4 roma tomatoes, chopped
  • 15 oz can of black beans, rinsed and drained
  • 1 avocado, quartered
  • 1/2 tbsp extra virgin olive oil (to cook peppers)
  • 1/2 tbsp minced garlic (to cook peppers)
  • 1/4-1/2 taco seasoning mix packet (1.3oz)
  • salt and pepper to taste
  • salsa of choice

Instructions

  1. make rice or quinoa according to package instructions. set aside in a Tupperware

    cook rice according to pkg instructions
  2. slice bell peppers. heat olive oil In a medium saute pan over med-high heat for about 30 seconds. Add garlic and saute for another 30 seconds. Add bell peppers and cook for approximately 4 minutes or until tender. Set aside in a Tupperware

  3. while peppers are cooking, chop lettuce and tomatoes, drain & rinse black beans, slice avocado and set each aside in its own Tupperware container

    while peppers are cooking get everything else ready and in a tupperware
  4. after peppers are done and set aside, add ground turkey to saute pan. add salt and pepper to taste and 1/4-1/2 of a taco seasoning packet. Stir occasionally. cook until no longer pink approximately 4 minutes. drain and set aside in Tupperware

  5. compile your burrito bowl by adding all ingredients to a bowl!

  6. top with your favorite salsa and hot sauce. enjoy!
