  • 1 tsp olive oil
  • 3/4 cup grape tomatoes, halved
  • 2 cups baby spinach
  • salt and pepper (to taste)


  1. slice tomatoes. 

  2. heat a small saute pan over medium heat and add olive oil for about 30 seconds. 

  3. add tomatoes and spinach and saute for approximately 3-4 minutes until spinach is wilted and tomatoes are starting to soften (don't overcook them!)

  4. serve with your favorite lean meat or fish like grilled Steak or Nut crusted halibut!
