Taco Spaghetti Skillet

Cheesy, meaty, taco spaghetti squash!

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 4 cups spaghetti squash (OR 1 cup dry pasta)
  • 1.5 lbs organic ground beef
  • 1 medium red onion, diced
  • 14.5 oz fire roasted tomatoes
  • 2 oz diced jalepeno
  • 1/2 cup lite shredded cheddar cheese

Taco Seasoning (can buy a packet instead and use 1/2)

  • 1/2 tsp garlic powder
  • 3 1/2 tsp chili powder
  • 1/4 tsp red pepper flakes
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 1 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1/4 tsp cayenne (optional)

Instructions

  2. in a small bowl, mix together all of the taco seasonings. Stir and set aside.

  3. in a skillet, over med-high heat, heat olive oil for about 30 seconds. add garlic for another 30 seconds.

  4. add onions to skillet and saute for approximately 2 minutes until slightly translucent.

  5. add ground beef to the skillet and cook for approximately 4 minutes. Stirring occassionally. Please note: the meat will still be pink. DRAIN.

  6. reduce heat to low-medium. add diced jalapeno, taco seasonings and tomatoes to skillet. Stir and cook for approximately 4 minutes or until flavors meld.

  7. add spaghetti squash and stir. add cheese and stir.

  8. serve with additional shredded cheese or Parmesan cheese. Enjoy!
