  • 3 cup watermelon, cubed
  • 3 cup arugula (NOT packed)
  • 1/2 cup crumbled feta
  • 1/2 cup fresh mint leaves, coarsely chopped
  • 1/2 cup red onion, thinly sliced
  • 1 cup cucumber, sliced and quartered
  • 24 oz grilled chicken (optional)


  • 3 tbsp lime juice
  • 1/2 tsp salt

  1. put sliced red onion in a small bowl and fill with water and a sprinkle of salt. Let soak for 5 minutes (or more). Take out of water and pat dry. (If you like the taste of raw onions, skip this step!)

  2. cube watermelon, chop mint and cucumber.

  3. in a small mixing bowl combine lime juice (fresh or bottled) and salt. stir and set aside.

  4. in a large mixing bowl combine arugula, watermelon, mint, feta, cucumber and dry onions.
