Cauliflower Rice

A healthier alternative to regular rice or other grains!

  • 1 lb cauliflower rice
  • 1 tbsp coconut oil
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp ground black pepper (or to taste)


  1. over low-medium heat, add coconut oil to a saute pan for about 30 seconds. 

  2. add cauliflower rice and cover for about 2 minutes stirring occasionally. 

  3. add salt and pepper and stir. Cover for about 5 minutes (stirring occasionally) or until cauliflower becomes translucent and it starts to brown. 

  4. serve with your main dish of choice! I love with grilled salmon, steak, cashew chicken, jambalaya, etc! I also top with Cholula to give it a little kick!
