  • 1 tbsp olive oil
  • 1 tbsp minced garlic gloves
  • 1.25 lbs Jennie-O Hot Italian Turkey Sausage (5 links)
  • 1 medium onion, diced
  • 1.5 cups water
  • 1 tsp dried basil
  • 2 medium zucchini sliced & halved
  • 2 medium summer squash sliced & halved
  • 14.5 oz diced tomatoes undrained
  • 15 oz garbanzo beans drained & rinsed
  • 14.5 oz beef broth, no salt added
  • 1 tsp salt (+ more to taste)
  • 1/2 tsp pepper (+ more to taste)


  • Parmesan Cheese
  • parsley, chopped

  2. heat olive oil in a skillet over medium heat for about 30 seconds. add garlic for about another 20 seconds.

  3. add onions to skillet and saute for about 2 minutes. add sausage and brown for about 3 minutes. drain.

  4. transfer sausage/onion to a big pot. add the rest of the ingredients to the pot and heat to boiling.

  5. reduce heat to low. cover and simmer about 10-15 minutes until zucchini is tender and flavors have melded together.  (the longer the better, this soup is actually better the next day!)
