Hawaiian Pork and Pineapple Sliders

hawaiian pork and pineapple slidersI could eat these pork and pineapple sliders every night! They are so delicious and have the perfect balance of carbs, fat and protein.

COOKING LIGHT ADAPTATION

This recipe was adapted from Cooking Light (click here to see original recipe) and was super easy to make! I doubled the meat and changed up some of the steps and ratios to make these more protein packed. See below for the modified recipe.

NUTRITION & MODIFICATIONS

Each batch makes 8 patties. I counted two sliders as one serving which equals 4oz of meat total. Two sliders have 532 calories, 56g carbs, 23g fat and 30g of protein. If you are watching your carb intake (or are gluten-free) you could wrap the burger in iceberg or butter lettuce (instead of the bun). If you are watching your fat intake you can swap out the pork for ground chicken or ground turkey. If you want more protein, increase meat to 1.5 lbs and still make 8 patties (each patty would now be 3oz = 6oz total for two). Remember there are always modifications to accommodate for any diet.

Ingredients
  • 1 lb ground pork
  • 1/4 cup ketchup
  • 2 tsp brown sugar
  • 8 pineapple rings, cored and sliced (I used canned pineapple sliced in pineapple juice)
  • 3 tbsp pineapple juice (I used juice that is in pineapple rings can)
  • 2 tbsp apple cider vinegar, divided
  • 1/2 cup scallions, sliced
  • 3/4 tsp salt, divided
  • 3/4 tsp ground black pepper, divided
  • 1.5 cup shredded red cabbage
  • 8 King's Hawaiian rolls
Instructions
  1. in a small mixing bowl, stir together ketchup, brown sugar, 1 tbsp pineapple juice, 1 tbsp apple cider vinegar. set aside.

  2. in a medium mixing bowl, combine ground pork with scallions, 1/2 tsp salt, 1/2 tsp pepper. Make 8 patties.

  3. lightly spray a grill pan (or use the real grill) with cooking spray and heat over medium high heat. add the patties to pan. Cook for approximately 6 minutes or until no longer pink. Flipping halfway through. set aside.

  4. using same grill pan, add the pineapple slices and cook about 2-3 minutes, flipping halfway through. place pineapple on top of patties.

  5. in a small mixing bowl, combine cabbage, 2 tbsp pineapple juice, 1 tbsp vinegar, 1/4 tsp salt, 1/4 tsp pepper.

  6. assemble the sliders! brush the top and bottom with ketchup mixture, place pork and pineapple on top of bottom bun, add cabbage. ENJOY!!
