This Chicken Soba Noodle Dish is a dish best served cold! It is a different take on your everyday pasta dish and the flavors are inspired by the Japanese.
NUTRITION
This recipe is packed with protein, however it is also a little carbohydrate heavy because of the soba noodles. Per serving there are 400 calories, 11g of fat, 31g of carbs, and 40g of protein! The protein and carb ratio make this recipe a perfect post workout meal. Lets go!!
CALLING ALL VEGETARIANS!
My inspiration for this dish came from Thug Kitchen! They make an eggplant recipe with this flavor profile however it is a bit more carbohydrate and oil heavy. I wanted to add some protein and tone it down a bit. If you are looking for the Vegetarian Eggplant version click here to buy the cookbook or just substitute eggplant for the chicken in my recipe below. Please note: I would follow the ratio’s in my recipe because in my opinion they are healthier and better proportioned. I also swapped out some additional oils they used for the existing marinade.
GLUTEN-FREE
If you want to make this recipe Gluten-Free then use gluten-free linguini instead of the soba noodles. Also swap out the soy sauce for Tamari or gluten-free soy sauce.
WHERE TO BUY
I found most of the ingredients you see below at Von’s (Southern CA local market) and Trader Joe’s! Trader Joe’s has an entire oil/vinegar section that is affordable and easy to navigate. Your local market should have soba noodles in the international section! Check for sesame seeds in the nut or baking section!
Products I love to use when making this dish:
Calphalon Grill pan (perfect for when its cold outside and you can’t use the grill!)
a cold, delicious, protein packed, Asian inspired dish
- 3/4 cup rice vinegar
- 1/2 cup water
- 1/2 cup low sodium soy sauce or Tamari
- 2.5 tbsp toasted sesame oil
- 1.5 tbsp light agave
- 2 tsp minced garlic
- 1.5 lbs skinless, boneless, chicken breast
- 75g soba noodles (or 1.5 bundles)
- 3 tbsp water
- 1/2 cup basil chopped
- sesame seeds

in a small mixing bowl, whisk together all of the ingredients together for the marinade. set aside 3/4 cup of marinade to use for later.

place chicken in a small baking dish and cover chicken with the rest of the marinade. Let marinate for at least 15 minutes.

while chicken marinates, cook soba noodles according the package instructions. (place noodles in boiling water and cook for about 4 minutes).

Drain noodles and rinse them with cold water so they don't continue to cook. place noodles in a large mixing bowl. take 1/4 cup of marinade and add to the soba noodle. Gently stir.

in a grill pan (or on the grill), grill chicken breasts for approximately 15 minutes or until chicken reaches an internal temp of 165 degrees. Flip halfway through. Let chicken cool.

while chicken is cooking, chop basil and add to noodles.

when chicken is done cooling, cut into bite size pieces and add to noodle bowl.

mix 3 tbsp water with 1/2 cup of marinade and add to bowl. Stir.

Top with sesame seeds and serve at room temperature or chilled!

I didn’t have rice vinegar so I used apple cider vinegar (googled to see what was the best substitute) and i only had whole wheat spaghetti instead of soba noodles…this was so yummy! Fam loved it!
