Air Fryer: Buffalo Cauliflower

air fryer buffalo cauliflowerLately, I have been obsessed with two things…. Buffalo and my air fryer! So I figured, why not make buffalo cauliflower in the air fryer?! I couldn’t come up with a reason why not to, so I jumped on the opportunity!

NUTRITION

This recipe makes about 4 servings. Per serving it has 147 calories, 5.7g fat, 20g carbs and 5g protein. It is super easy to make and requires minimal prep!

AIR FRYER

My air fryer is my new favorite toy. Why? It is the bomb.com! It is an air fryer, toaster, oven all in one! True it takes up a bit of space on my counter BUT it fits a ton and I can make everything in one batch (whereas other air fryers would take 2-3 batches!). I have the one from Cuisinart (click here to view/buy) and want to start making more and more things in it! If you have the room and about $180 I wouldn’t even hesitate! It makes the perfect steaks, chicken wings and so much more!

CAULIFLOWER HEAD OR FLORETS?cut caulifower into florets

I used to think buying a head of cauliflower was intimidating because I had no idea how to cut one. Let me tell you… it’s easy! You simply slice off the bottom and you can see the florets all stuck together. You just start cutting off the florets from the base… voila! OR you could just buy a bag of pre-cut florets. Whatever tickles your fancy will work! If i buy them pre-cut, Costco sells a huge bag of florets for relatively cheap and if I buy a head of cauliflower I buy it at Trader Joe’s because its the cheapest you will find! Our local market sells heads BUT they charge you by the pound. At Trader Joe’s its one price and I just search until I find the biggest one!

WHAT ARE PANKO CRUMBS?

Panko crumbs (breadcrumbs) are flaky breadcrumbs.  They are a crunchy coating for fried foods usually used in Japanese recipes. They are a healthier alternative to regular breadcrumbs because they are lower in calories, fat and sodium but higher in fiber. I buy mine at Trader Joe’s but you should be able to buy them at your local supermarket or international food store. In this recipe they just give you a little bit of crunch. Panko crumbs are vegan and vegetarian BUT not gluten-free. If you are gluten-free you will want to just leave them out.

Ingredients
  • 1/2 cup frank's red hot buffalo wing sauce
  • 2 tbsp grass fed butter
  • 1 cauliflower head (or 24 oz of florets)
  • 3/4 cup panko breadcrumbs
  • cooking spray to spray air fryer basket
Instructions
  1. cut florets into bite size pieces

    cut caulifower into florets
  2. in a medium pot, melt 1/2 cup franks red hot and 2 tbsp grass fed butter until smooth

  3. in a medium mixing bowl, toss cauliflower florets with buffalo sauce until coated

  4. add panko to mixing bowl and toss cauliflower until coated

  5. spray air fryer basket with cooking spray and lay cauliflower in a single layer

  6. air fry at 320 degrees for approximately 20 minutes. repeat if necessary.
