Healthy Pizza Bake

pizza-bake-v2MMMM PIZZA!! Ok, so this healthy pizza bake isn’t really a substitute for Pizza but it is delicious. The base of this recipe is  spaghetti squash and it’s jam packed with lean ground turkey, Jennie-O hot Italian turkey sausage and veggies. It screams health!

I adapted this recipe from my gym Performance 360. I didn’t do much to alter the original recipe besides cooking the spaghetti squash in the microwave, in advance and adding way more veggies and meat and some additional spices. While I increased the meat/veggie portions, I kept the other measurements the same making each bite more protein packed!

I used to make this way spicier but I toned it down for the masses. To make it a little spicier, just add more cayenne. That will heat things up real quick! If you don’t like spice, just omit the cayenne and use Jennie-O sweet Italian turkey sausage.

As you can tell by now, I love spaghetti squash. It is a much healthier alternative to pasta and satisfies that craving, while keeping you full and fit. This recipe is the one that inspired my pesto chicken bake and buffalo chicken bake! This is the OG!!

Pro Tip: I make the spaghetti squash in advance and let it strain before mixing all the ingredients together. I do this to get rid of all the excess water that the vegetable naturally holds. *Do not overcook the spaghetti squash*. Click here for how to cook.  I also cook the ground turkey and turkey sausage in advance. I leave the veggies raw and mix everything together before baking.

This recipe is super easy to make and a great weekday lunch. It will not only leave you satisfied, but you won’t feel sluggish!  Top with Parmesan Cheese and Enjoy!!

Ingredients
  • 1 large spaghetti squash (about 6 cups)
  • 1.5 lb ground turkey
  • 1.25 lb hot italian turkey sausage
  • 1 medium onion, diced (I use red)
  • 2 bell peppers diced (red/orange for color)
  • 2 zucchini, sliced & quartered
  • 3 eggs whisked
  • 1 cup pizza sauce
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/2 tsp dried basil
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 3/4 tsp cayenne pepper
Instructions
  1. cook and drain spaghetti squash.

  2. while spaghetti squash is cooking, decase sausage and pull into chunks.

  3. cut up veggies and onions. preheat oven to 350 degrees.

  4. over medium-high heat, heat olive oil for 30 seconds, add garlic and heat for another 30 seconds. add onions and saute for 2 minutes.

  5. add sausage and ground turkey and cook approximately 5 minutes. meat will still be slightly pink.  Drain.

  6. add meat, veggies, cayenne, pepper and salt to large mixing bowl.

  7. whisk eggs and add eggs and pizza sauce to mixing bowl.

  8. add about 6 cups of spaghetti squash and mix well.

  9. lightly grease 13x9 AND 8x8 baking dish.

  10. add mixture to the baking dishes.

  11. cook for 60 minutes at 350 degrees. 

  12. top with Parmesan cheese and Enjoy!
